Ingredients
- Brinjals - 6 nos Medium size
- Red chilli powder - 3 tbs
- Salt - to taste
- Onion - 3 Medium
- Garlic - 6 cloves
- Ginger - Small piece
- Tomato - 2 small
- Turmeric (Haldi) - 1 tbs
- Coriander powder - ½ tbs
- Peanuts - 3 tbs
- Cloves - 2 nos
- Cinnamon - 2 small pieces
- Water - 250 ml
- Tamarind Syrup - 2 Tbs
- Oil - 5 tbs
For Seasoning
- Curry leaves (Karivepaku) - 5-6 leaves
- Onion (Ullipaaya) - 1 sliced
- Tomato - 1 sliced
- Green Chillies - 1 nos
- Coriander leaves chopped - 1 ½ tbs
Masala Preparation for stuffing
- Take a pan, put oil (2tbs) into the pan. After heating the oil, add 2 cloves, cinnamon bark, peanuts and fry them till the peanuts splatters. Add 2 chopped onions, 6 cloves of Garlic, Ginger(Cut into small pieces) and fry them till the onions turned into golden yellow color.
- Add 2 tomatoes (chopped) into the above mix and stir it well till the tomato become soften.
- Add 2½ tbs of Red chilli powder, Corriander powder, turmeric powder and stir them till the raw flavor of the powders gone. Add 50 ml of water and stir them well and switch off the stove and keep them to get the mixture cool.
- Take a mixer, put the above masala into it and add salt to the mixture and grind it well. Keep this mixture aside.
- Note: We can prepare the above masala without frying also. But it takes a lot of time while frying the masala after stuffing and also the curry will get spoiled quickly with raw masala. Hence I prefer fried masala.
- Clean the brinjals well and cut (very little) the crown of the brinjal.
- Slit the brinjals into four (X shape)
- Stuff the above masala into all the Brinjals and keep it aside.
- Take a Pressure cooker and add 3Tbs of Oil. Once the oil gets heated, add 1 chopped onion, 1 silted green chili and curry leaves and fry it till the onions turned into golden brown color.
- Add 1 chopped tomato into it and stir them till the tomato gets soften.
- Add the rest of masala now and fry it for 3 mins.
- Now add the stuffed brinjal to this mixture and fry it till all the brinjals changed their color.
- Simmer the stove and let the brinjals cook under steam for 7 mins.
- Add 200 ml of water to this and leave this till the water get boiling stage.
- Now add 2tbs of Tamarind syrup to this, stir it well and keep the lid closed and pressure it for ONLY 1 whistle.
- Your Brinjal curry is Ready. Garnish with coriander leaves.
Notes
- We can Cook in Tawa also instead of Cooker. But it takes little more time to get the Brinjal cooked.
- Add salt during fry of the onions and other veggies itself. Hence the onions and other veggies will get fried quickly.
